Double Chocolate Muffins
These muffins are full of chocolate! We don't make them a lot, but they are nice treat once in a while. They are a favorite of many people at our house. We made a 3x batch, which made about 4 1/2 dozen muffins. One batch should make about 1 1/2 dozen muffins.
Ingredients:
1/3 cup butter 3/4 cup buttermilk
1 cup semi-sweet chocolate chips 1-1/2 Tablespoons vanilla1-2/3 cups all-purpose flour 2 eggs, lightly beaten
1 teaspoon salt 1/2 cup sugar
1 teaspoon baking soda 1 cup chocolate chips
1/2 cup sour cream coarse sugar
1 cup chocolate chips in a saucepan.
Remove from heat; cool for 10 minutes.
In a large bowl, combine
1-2/3 cups all-purpose flour,
1 teaspoon salt, and
1 teaspoon baking soda.
We used some whole wheat pastry flour in our muffins.
In a small bowl, stir together
1/2 cup sour cream,
3/4 cup buttermilk, and
1-1/2 Tablespoons vanilla
extract until sour cream is mixed in well.
Stir in 2 eggs, and 1/2 cup sugar. A small bowl didn't work so well for our 3 batches....but yes, it all fit! it was challenging to stir though...
